Gallica, the digital branch of the French National Library, holds hundreds of textbooks used in French military schools between 1850 and 1950. Dealing with subjects as broad as Military History (1789-1914) and as specialized as Twin Mount for Machine Guns, Model 1931F, these offer much of interest to students of military matters. Moreover, the good people at Gallica - what I like to call ‘Google Books done right’ - have provided an easily translated text file for each book they have digitized. Thus, the enjoyment of this treasure trove is no longer limited to folks who sing Mademoiselle from Armentières in the shower.

The advanced search page provided by Gallica allows you to search for books of this sort the old-fashioned way. You can also use the links provided below, which are organized by school. (Note that some schools enjoy better representation than others.)
